Oprindelse:
Denne stamme blev isoleret fra druer dyrket i Côtes-du-Rhône-regionen i Frankrig af Dr. Dominique Delteil, chef for mikrobiologisk afdeling, Institut coopératif du vin (ICV), i Montpellier. ICV D-47 stamme blev udvalgt fra 450 isolater indsamlet mellem 1986 og 1990.
Ønologiske egenskaber og anvendelser
ICV D-47 er et lavtskummende praktisk fermentor der afvikler godt, danner en kompakt bærmen i slutningen af fermenteringen.
Denne stamme tolererer gæring temperaturer fra 15 ° til 20 ° C (59 ° til 68 ° F) og øger mundfornemmelse på grund af komplekse kulhydrater. Malolaktiske gæring forløber godt i vin lavet med ICV D-47.
Anbefales til at gøre vine fra hvide sorter som Chardonnay og rosévin. Et fremragende valg til fremstilling af mjød, dog skal du sørge for at supplere med gær næringsstoffer, især brugbart kvælstof.

For complex whites with citrus and floral notes
Enoferm ICV D47™ is a Côtes du Rhône isolate from Suze-la-Rousse for the production of fullbodied barrel fermented Chardonnay and other white varietals. When left on lees, ripe spicy aromas with tropical and citrus notes are developed. ICV D47™ is a high polysaccharide producer known for its accentuated fruit and great volume. On most white grape varieties, this yeast elaborates wines with ripe stable fruits or jam-like aromas. Thanks to these aromas, the cuvées fermented with the ICV D47™ are a good source of complexity in the blends. Moreover, ICV D47™ contributes to the wine’s silkiness and persistence. Excellent results are obtained for the production of top-of-the-range Chardonnay fermented in barrels, especially when blended with Lalvin ICV D21® fermented Chardonnays.
